Crumb Fried Chicken

2 English Oven Burger Buns
2 tbsp Mayonnaise
1 Chicken breast (about 200 gms), cut into half and flattened
½ cup Bread crumbs
2 tbsp Corn flour
1 Egg
2 tsp Chilli Sauce
1 tsp Worcestershire Sauce
½ tsp Honey
½ tsp Red Chilli Flakes
Salt and Pepper
Oil for shallow frying
2 Cheese Slices
2 slices of Tomato
Few Lettuce Leaves


Marinate the flattened chicken in a mix of the sauces, honey and seasoning. Add the egg and mix well to coat the pieces evenly. Spread the bread crumbs on a plate, mix in the corn flour with a fork, season with salt and pepper. Remove the chicken pieces from marinate, shake off the excess liquid and pat on the bread crumbs. Press down gently to coat both sides well. Heat oil in a pan, shallow fry the chicken cutlets till evenly light brown and crisp, about 3-4 mins on each side. Drain on paper towels. Make the burger by adding a slice of cheese, a lead of lettuce, spread mayo on the bottom half of the bun, add the chicken cutlets. Close and serve hot with gherkins.
