  • Feta & Marmalade

    Ingredients:
    6 slices English Oven Sandwich Bread
    3 tbsp Feta Cheese, soft
    3 tbsp Orange Marmalade
    Fresh pepper, optional
    Marmalade:
    500 gms Oranges
    250 gms Sugar
    1 Lemon
    250 ml water

    Method:

    Peel the oranges, separate the segments and use a small knife to remove skin and reserve the pulp, squeeze out juice from waste bits if need be. Take the peels of one orange and remove the inner white layer with a peeler, when you have cleaned pieces of the rind, cut into fine slivers and set aside. Cut and squeeze the lemon, reserve the juice and use a grater to make 1 tsp of zest. Mix the pulp, juice, zest and rind with the lemon juice. Add the water and bring to a gentle boil. Cook on simmer for 30 minutes, and then add the sugar and let is dissolve. Cook down to desired consistency, cool completely and store in airtight containers for up to 1 month.

    To make the sandwich, spread feta on 3 slices and orange marmalade on 3 slices, alternately later, cut into triangles and serve cold. If using pepper, season the feta before using.

  • Classic Cheese Melt

    Ingredients:
    4 slices English Oven Sandwich Bread
    2 slices Cheddar Cheese
    2 tbsp Cream Cheese
    1 tbsp Butter to grease
    1 tsp Cajun Spice Mix

    Method:

    Heat a grill pan or sandwich grill, grease. Make two sandwiches with the cheddar cheese slices; add more if you want a more loaded sandwich. Place on the grill and gently press down with a wooden spatula to sizzle. Once the cheese melts and the sandwich is evenly brown, remove and serve hot with a side of Cajun spiced cream cheese.

  • Classic PBJ

    Ingredients:
    4 slices English Oven Sandwich Bread
    2 tbsp Preserve of your choice, suggested: Strawberry or Mixed Berries
    3 tbsp Peanut Butter
    Peanut Butter:
    200 gms Peanuts
    1 tbsp Butter
    2 tbsp Honey
    Pinch of salt

    Roast the peanuts in a hot oven (175C) for about 6-7 minutes. Grind the peanuts while warm, in a mixer. Keep pulsing the peanuts; stop to scrape down so they become a fine, even paste. After 3-4 pulses when the peanuts begin to being creamy lumps add the salt, butter and honey. Process for 1 to 2 additional minutes and continue processing the butter until it becomes completely smooth. Store for up to a month in an airtight container, refrigerated.

    Method:

    Make sandwiches by spreading homemade peanut butter and your choice of preserve on alternate slices. Layer and cut into triangles or rectangles and serve cold. These are ideal for the lunchbox.

  • Chicken Ham & Cheese - Mustard Dressing

    Ingredients:
    4 slices English Oven Sandwich Bread
    4 slices of Chicken Ham
    4 slices Sharp Cheddar Cheese
    Salt & Pepper
    Gherkins for garnish
    ½ tbsp Butter to grill

    Method:

    Use the chicken ham and cheese slices to make two sandwiches, cut into half to make four pieces. Season with salt and pepper. Heat a non-stick grill pan or use a sandwich grill, grease the pan or grill, place the sandwiches gently on the pan or grill and use a wooden spatula to press down gently so the cheese begins to melt. Grill evenly on both sides, remove, garnish with gherkins and serve with ketchup and mustard.

  • French toast with Honey Mustard/Preserves

    Ingredients:
    2 Slices English Oven Sandwich Bread
    1 Egg
    2 tbsp Milk
    1 tsp Fresh Cream
    1 tbsp Sugar
    2-3 drops Vanilla Extract
    Choice of preserve
    1 tsp Oil for pan frying

    Method:

    Whisk together the egg, milk, cream, sugar and vanilla. Slice the bread, soak for few seconds in the egg mix and coat both sides well. Heat oil in a pan, fry the eggs slices gently as they will be soft, fry on low till lightly crisp on both sides. Remove and spread your preferred choice of preserve on the French toasts, make sandwiches and serve hot with fresh fruits on the side.
