Feta & Marmalade

Ingredients:
6 slices English Oven Sandwich Bread
3 tbsp Feta Cheese, soft
3 tbsp Orange Marmalade
Fresh pepper, optional
Marmalade:
500 gms Oranges
250 gms Sugar
1 Lemon
250 ml water

Method:

Peel the oranges, separate the segments and use a small knife to remove skin and reserve the pulp, squeeze out juice from waste bits if need be. Take the peels of one orange and remove the inner white layer with a peeler, when you have cleaned pieces of the rind, cut into fine slivers and set aside. Cut and squeeze the lemon, reserve the juice and use a grater to make 1 tsp of zest. Mix the pulp, juice, zest and rind with the lemon juice. Add the water and bring to a gentle boil. Cook on simmer for 30 minutes, and then add the sugar and let is dissolve. Cook down to desired consistency, cool completely and store in airtight containers for up to 1 month.

To make the sandwich, spread feta on 3 slices and orange marmalade on 3 slices, alternately later, cut into triangles and serve cold. If using pepper, season the feta before using.
