Grilled Mexican Spiced Paneer

Ingredients:
4 slices English Oven Multi-Grain Bread
150 gms Cottage Cheese, crumbled
½ cup Bell Peppers, thinly sliced
2 tsp Mexican spice
¼ tsp Red Chilli Flakes
½ tsp Dried Mint
1 tbsp Oil + extra to grease Grill Pan/Sandwich Toaster

Method:

Heat the oil in a pan, add the bell peppers and fry till soft. Then add the crumbled paneer, toss it till it is glossy and sizzling. Add the Mexican spice mix, chilli flakes and mint, mix together. Season with salt and pepper and remove from heat. Make two sandwiches with the cooled paneer mix and grill in a greased, hot sandwich toaster or on a grill pan, till toasted. Serve hot with potato wedges and salsa.
