Hummus Veggie

4 slices English Oven Honey & Oatmeal Bread
400 gms boiled Chickpeas
2 tbsp Tahini paste
2 tsp fresh Garlic paste
6-8 tbsp Extra Virgin Olive Oil
2 tbsp Lemon Juice
½ tsp Salt
For the Sandwich:
½ Yellow Zucchini, sliced
1 tsp olive oil
Salt and pepper
Few Rocket Leaves


Blend the chickpeas and Tahini together to make a thick paste, add the garlic, lemon juice (half at a time) and salt. Blend again. Now pour in half the olive oil and blend again. Reserve 1-2 tbsp of the olive oil for dressing the Hummus, use the remaining for blending. Check lemon flavour and salt. Empty the contents into a bowl and mix in the leftover olive oil if need be. You can also add flavours like Paprika or chopped olives. Heat olive oil in a pan, season the zucchini slices with salt and pepper and fry till soft and cooked. Remove and set aside.

To assemble the sandwich, spread hummus on all slices, layer with zucchini slices and fresh rocket leaves. Close the sandwich and cut into desired shape. Serve cold with a side of green or black olives.
