What you will need!

Vada

100gms Potato, boiled and mashed

2gms Mustard Seeds

1gm Hing

4cloves Garlic, minced

2 Green Chillies, minced

2gms Turmeric Powder

2gms Curry Leaves

5gms Coriander, finely chopped

Batter

200gms Besan

1gms Chaat Masala

1gm Carom Seeds

1gms Chilli Powder

Salt, to taste

80-100ml Water

Oil for Frying

Green Chutney

50gms Coriander

50gms Mint

4cloves Garlic, peeled

5gms Green Chillies

5ml Lemon Juice

Salt, to taste

Sugar, to taste

How to make

Putting it together

In a pan, add oil, mustard seeds, hing, curry leaves and let it all sizzle

Next add the minced garlic and chillies.

Add the mashed potatoes, turmeric powder and coriander leaves cook for another 5mins and shape them into vadas.

In a bowl, combine all the ingredients for Batter except water.

Pour water little by little and make it into a thick batter but not too thick

Dip the potato balls in this batter and add in the hot oil for frying

Fry the vada until crispy and golden brown

In a blender jar, add all the ingredients for Green Chutney and blitz it until smooth

Keep it in a jar or airtight container with a squeeze of lime on top to avoid oxidization

Cut English Oven Pav bread from the middle

Apply red dry chutney, green chutney and place the vada in between

Close the pav and enjoy it with hot tea!
