What you will need!

Pesto Sauce

50gms Basil

10gms Almond

20gms Parmesan Cheese, grated

5ml Lemon Juice

2cloves Garlic, peeled

Salt, to taste

100ml Olive Oil

Roasted Veggies

250gms Peppers, whole

250gms Zucchini, sliced

100gms Tomatoes, quarters

25ml Olive Oil

Salt, as per taste

Pepper, as per taste

Ingredients for Assembly

4slices English Oven Multigrain bread

10gms Lettuce

How to make

Putting it together

In a blender jar, add all the ingredients and blitz it until smooth.

Transfer the pesto sauce in a bowl and keep aside for later

Preheat the oven at 200c

Line a baking tray with parchment paper and lay all the veggies on it.

Drizzle oil, salt, pepper and massage the veggies.

Grill the veggies until nicely charred on the outside and soft.

Peel the skins off the tomatoes and peppers and keep aside.

Grill the veggies until nicely charred on the outside and soft.

Take couple of slice of English Oven Multigrain bread

Apply a generous amount of pesto on the bottom slice and then layer the lettuce.

Add the roasted veggies one by one and close the sandwich
