Spicy Feta & Spinach
- 1 English Oven Pizza Base
- 4 tbsp Feta Cheese
- 2 tsp Cajun Spice Mix
- 4-5 Spinach leaves, blanched and drained
- Pesto Sauce:
- 1 cup fresh Basil Leaves
- 4 tbsp Parmesan cheese, grated
- 60-70 ml Extra Virgin Olive Oil
- 50-60 gms Pinenuts
- 3-4 cloves of Garlic
To make the pesto sauce, blend all the ingredients to a grainy sauce, adjust the nuttiness by adding more pine nuts or use a little more olive oil to get a better texture. Remove from blender and store in an airtight glass jar for up to 2 weeks in the fridge.
To assemble the pizza, spread the pesto sauce on the pizza base, top with blanched spinach leaves and drop dollops of feta cheese or spoon it all over the spinach. Sprinkle with Cajun spice. Pre heat the oven to 200C and bake for 5-7 minutes or till the base is lightly crisp and the cheese becomes soft. Serve hot.
