Spinach & Goat Cheese

Ingredients:
4 slices English Oven Honey & Oatmeal Bread
10-12 fresh Spinach leaves
1 tsp Olive Oil
Salt and Pepper
4-5 tbsp Goat Cheese
½ tsp Mustard Powder
½ tsp Chilli Flakes
Salt and Pepper

Method:

Heat olive oil in a pan, don’t let it burn. Add the washed spinach leaves, season with salt and pepper and sauté till soft but not mushy or cooked through. Remove and set aside. Mix the goat cheese with the mustard powder, chilli flakes and salt and pepper. Spread the goat cheese mix on one slice of bread, top with cooled spinach leaves and close the sandwich. Serve hot and cold if you like, warm spinach and cold goat cheese.
