 Recipes 

  • Classic Cheese Oregano

    Ingredients:
    1 English Oven Pizza Base
    50 gms Mozzarella Cheese, grated
    30 gms Cheddar Cheese, grated
    15 gms Parmesan Cheese, grated
    Pizza Sauce:
    1 Onion, finely chopped
    2-3 Garlic Cloves, minced
    2 Tomatoes cut into small dices
    2 tbsp Tomato Puree
    2 tbsp Ketchup
    1 tsp Oregano
    4-5 Basil leaves
    3 tbsp Olive Oil
    Salt and Pepper
    Oregano for garnish

    Method:

    Heat oil in a pan, sauté the onions and garlic till soft and transparent. Add the tomatoes and cook on a low flame, till they soften, add the ketchup and puree and season with oregano, salt and pepper. Cook for 5-6 minutes till the sauce is thick and bubbling. Add the basil leaves and let them soften. Check seasoning and remove from heat. You can cool and bottle this up to a week. If you plan to make a large batch, add a bit of olive oil before bottling.
    To make the pizza, pre-heat the oven to 200C. Spread the pizza sauce on the base, top with mozzarella, then cheddar and finally the parmesan. Bake for 4-5 minutes or till the cheese melts evenly. Remove from oven and garnish with dry oregano, serve hot.

  • Tri Bell Pepper

    Ingredients:
    1 Pizza Base
    3-4 tbsp Pizza Sauce*
    50 gms Mozzarella, thinly sliced
    25 gms Processed Cheese
    6 slices Bell Peppers, red, green, yellow
    ½ tsp Dry Oregano
    1 tsp Olive Oil
    *Pizza Sauce Recipe is given with the Classic Cheese Pizza Recipe

    Method:

    Spread the pizza sauce on the pizza base, top with bell peppers of your choice and quantity, top with the two cheeses mixed together. Pre heat oven to 200C and bake the pizza with a drizzle of olive oil, for 6-7 minutes or till the cheese is melted and bubbly. Remove and serve hot.

  • Spicy Feta & Spinach

    Ingredients:
    1 English Oven Pizza Base
    4 tbsp Feta Cheese
    2 tsp Cajun Spice Mix
    4-5 Spinach leaves, blanched and drained
    Pesto Sauce:
    1 cup fresh Basil Leaves
    4 tbsp Parmesan cheese, grated
    60-70 ml Extra Virgin Olive Oil
    50-60 gms Pinenuts
    3-4 cloves of Garlic
    Salt

    Method:

    To make the pesto sauce, blend all the ingredients to a grainy sauce, adjust the nuttiness by adding more pine nuts or use a little more olive oil to get a better texture. Remove from blender and store in an airtight glass jar for up to 2 weeks in the fridge.
    To assemble the pizza, spread the pesto sauce on the pizza base, top with blanched spinach leaves and drop dollops of feta cheese or spoon it all over the spinach. Sprinkle with Cajun spice. Pre heat the oven to 200C and bake for 5-7 minutes or till the base is lightly crisp and the cheese becomes soft. Serve hot.

  • Mascarpone Mushroom & Olive

    Ingredients:
    1 English Oven Pizza Base
    ½ cup sliced Mushrooms
    2-3 tbsp sliced Black Olives
    6 tbsp Mascarpone cheese
    3-4 tbsp Pizza Sauce

    Method:

    To assemble the pizza, spread the base with pizza sauce, top evenly with mushroom slices and black olive slices. Whip the mascarpone to soften and drop spoonful over the mushrooms and olives. Pre heat the oven to 200C and bake the pizza for 5-7 minutes or till the cheese is melting over and the mushrooms have softened. Serve hot.

    Ingredients:
    2 English Oven Burger Buns
    1 cup Boiled Mixed Vegetables – carrots, cauliflower, beans
    1 large Boiled Potato
    2 tbsp Corn flour
    ½ tsp Cumin Powder
    ½ tsp Fresh Pepper Powder
    ½ tsp Chilli Powder
    Salt
    1 cup Seasoned Bread crumbs
    Oil for Shallow frying
    For the Burger:
    2 slices of Tomato
    2 Lettuce leaves
    2 Cheese slices
    1 tbsp English Mustard or Coriander Chutney

    Method:

    Mash the boiled vegetables with the potato, season with the masalas and add the corn flour. Blend the patty dough well together and check the salt. Moisten hands with water to form patties, coat with seasoned breadcrumbs and shallow fry in hot oil for few minutes on each side, till both sides are evenly brown and crisp.
    To assemble the burger, use mustard sauce or coriander chutney as the base, layer with a slice of cheese, then a lettuce leaf, place the vegetable patty and top with tomato slices. Serve hot with mustard or chutney.

  • Chettinad Paneer

    Ingredients:
    2 English Oven Burger Buns
    200 gms Paneer, cut into small cubes
    Few curry leaves
    1 onion, finely chopped
    1 tomato, cut into small cubes
    1 tbsp Fresh Coriander, chopped
    1 tsp ginger and garlic paste
    4 tbsp Tomato Puree
    1 tsp Chilli sauce
    ½ tsp cumin powder
    ½ coriander powder
    ½ tsp Garam masala
    1 tbsp Olive Oil
    Fresh Lettuce Leaves
    Fresh Coriander

    Recipe:

    Heat oil in a pan, fry the ginger garlic paste for a minute and add the onions and clean curry leaves, fry till soft and onions are transparent, add the tomatoes and cook for 3-4 minutes on a low flame. Add the tomato puree and chilli sauce and the seasoning masalas and cook till the oil separates, add the paneer cubes and fresh chopped coriander. Coat and cook for a minute or two. Remove from heat.
    To assemble the burger, layer with a lettuce leaf and top with the Chettinad Paneer mix, garnish with a coriander leaf and serve with potato wedges.

  • Mexican Bean Burger

    Ingredients:
    1 cup Boiled Rajma
    1 large Boiled Potato
    ½ tsp Cumin Powder
    ½ tsp Chilli flakes
    1 tsp Mexican mixed spice
    2 tbsp Corn flour
    Salt and Pepper
    Olive oil for frying
    For the Burger:
    2-3 tbsp Mayonnaise
    6-8 sliced Jalapenos

    Method:

    Mash the rajma, corn flour and potato together, seasoning with the masalas and Mexican spice mix and blend well together, check salt. Heat oil in a frying pan, moisten hands and form burger patties with the rajma mix and fry on low flame for 2-3 minutes on each side, till evenly brown and crispy. Remove on a plate.
    To assemble the burger, spread mayonnaise on the lower slice and place the bean patty on top, garnish with jalapeno slices and serve hot with salad.

  • Crumb Fried Chicken

    Ingredients:
    2 English Oven Burger Buns
    2 tbsp Mayonnaise
    1 Chicken breast (about 200 gms), cut into half and flattened
    ½ cup Bread crumbs
    2 tbsp Corn flour
    1 Egg
    2 tsp Chilli Sauce
    1 tsp Worcestershire Sauce
    ½ tsp Honey
    ½ tsp Red Chilli Flakes
    Salt and Pepper
    Oil for shallow frying
    2 Cheese Slices
    2 slices of Tomato
    Few Lettuce Leaves

    Method:

    Marinate the flattened chicken in a mix of the sauces, honey and seasoning. Add the egg and mix well to coat the pieces evenly. Spread the bread crumbs on a plate, mix in the corn flour with a fork, season with salt and pepper. Remove the chicken pieces from marinate, shake off the excess liquid and pat on the bread crumbs. Press down gently to coat both sides well. Heat oil in a pan, shallow fry the chicken cutlets till evenly light brown and crisp, about 3-4 mins on each side. Drain on paper towels. Make the burger by adding a slice of cheese, a lead of lettuce, spread mayo on the bottom half of the bun, add the chicken cutlets. Close and serve hot with gherkins.

  • Grilled Chicken

    Ingredients:
    2 English Oven Burger Buns
    200 gms Boneless Chicken, cut into thin strips
    1 tbsp Soy Sauce
    1 tsp Honey
    1 tsp Dijon Mustard
    1 tbsp Ketchup
    1 tsp garlic paste
    Salt and Pepper
    Olive Oil for pan frying
    For Burger:
    4 Onion Slices
    2 Lettuce Leaves
    2-3 tbsp Mayonnaise

    Recipe:

    Marinate the chicken strips in the soy, honey, mustard, ketchup and garlic paste, season with salt and pepper and set aside for an hour, refrigerated. Heat olive oil in a pan and fry the chicken strips on high flame for 2-3 minutes, tossing in the pan, then lower flame and cook for another 3-4 minutes till done. Remove and drain in a plate.
    To assemble the burgers, spread the lower slice with mayonnaise, top with a lettuce leaf and place few strips of the chicken. Add cheese if you like. Serve hot with BBQ sauce and French Fries.

    Ingredients:
    2 English Oven Hotdog Roll Breads
    1 cup Chickpeas, boiled
    1 Onion, finely chopped
    3-4 cloves of Garlic, minced
    4-5 tbsp Fresh Coriander, chopped
    2-3 tbsp Fresh Parsley, chopped
    ½ tsp Cumin Powder
    1 tsp Coriander Powder
    ½ tsp Fresh Pepper Powder
    ½ tsp Paprika powder
    1 tbsp Sesame seeds
    Salt
    4 tbsp Hummus*
    Olive Oil for Pan Frying

    Method:

    Mash the boiled chickpeas well. Add all the spices and the onions, coriander and parsley. Mash it all well together, you can use a food processor but avoid pureeing. Leave the mix open to dry off for an hour or so. Heat oil in a pan and form balls of the chickpea paste and roll lightly on sesame seeds. Fry the falafel balls in the pan, till lightly brown on all sides, about 3-4 minutes. Drain and set aside.
    To assemble the hotdog, spread hummus in the lower slice of the hot dog, place falafel over it and close. Serve with olive and gherkins.

  • Slaw Dog

    Ingredients:
    2 English Oven Hotdog Roll Breads
    1.5 cup Mixed vegetables, cut into thin slices – cabbage, carrot, capsicum
    ½ cup Mayonnaise
    1.5 tsp Wine Vinegar
    ½ tsp Mustard Powder
    ½ tsp Honey
    1 tsp White Pepper Powder
    Salt

    Method:

    Mix the vegetables with the mayonnaise and the vinegar. Add honey and mustard and pepper powders, season with salt and add the mixed herbs mix. Toss well to make coleslaw. Spread the slaw in the hotdog rolls and serve cold with ketchup and mustard sauce. You can also serve with fries and wedges.
