Ingredients

What you will need!

Hummus

150gms Chickpeas, boiled

2cloves Garlic

5ml Lemon Juice

2gms Cumin Powder

10gms Tahina

Roasted Veggies

250gms Peppers, whole

250gms Zucchini, sliced

100gms Tomatoes, quarters

25ml Olive Oil

Salt, as per taste

Pepper, as per taste

Ingredients for Assembly

4slices English Oven 100% Whole Wheat bread

10gms Lettuce

How to make

Putting it together

In a blender, add all the ingredients for Hummus and blitz it until smooth

Take it out in a bowl, top it with some olive oil and keep aside for later

Preheat the oven at 200c

Line a baking tray with parchment paper and lay all the veggies for Roasted Veggies on it.

Drizzle oil, salt, pepper and massage the veggies.

Grill the veggies until nicely charred on the outside and soft.

Peel the skins off the tomatoes and peppers and keep aside.

Take couple of slice of English Oven 100% Whole Wheat bread

Apply a generous amount of hummus on the bottom slice and then layer the lettuce.

Add the roasted veggies one by one and close the sandwich

Cut into it and enjoy!
